Yes, I almost forgot, when mentioning the Caucasian cuisine I recall adjika. Did you know that in translation from Abkhaz language, the word adjika is salt. In the Caucasus there is even an interesting legend associated with this food.

According to her, in ancient times, when salt was still very expensive (almost worth its weight in gold), then in Abkhazia, using it for feeding sheep (so that they gain weight faster), the owners of the flock, so that the shepherds did not steal this valuable food product, mixed it hot red pepper, various herbs. It made it so hot on The taste of salt is attractive only to animals. But resourceful shepherds found a way out of this situation, they added to the explosive salt mixes more cilantro, garlic and some other ingredients and with with great pleasure we ate the resulting adjika (salt). Now this adjika salt has become the essence of the whole Caucasian cuisine.

The famous Caucasian pita bread is also called diaper bread. According to another Caucasian legend, the ancient Armenians constantly fought with the raids of nomadic tribes, which often forced the local population was by surprise and took away all the food. Diaper cakes made it easy for Armenians to hide such bread, even under clothes, so the locals always stayed with food.
